2 lbs. lean ground beef
2 eggs, beaten
1 10 3/4 oz. can cream of mushroom soup
salt and pepper, to taste
1 individual packet dry onion soup
1 c. Ritz crackers, crushed into crumbs
1/2 c. milk
1 c. sharp cheddar cheese, cubed
1/2 c. water
1/2 c. ketchup

Directions:
Directions:
Combine all ingredients except for the water and ketchup. Mix well. Spread into a casserole dish. Mix together the water and ketchup and spread over meat mixture. Bake at 350 degrees for 1 hour.

Variation: For a drier meat loaf omit cream of mushroom soup. Also, 1 T. of additional ketchup can be added to the meat mixture for flavor. If preferred, ketchup does not have to be mixed with water for topping. Simply drizzle ketchup across the top of the meat mixture.
