1 cup sugar; 3 Tbsp. oil; 1/2 tsp. vanilla extract; 1 egg; 3/4 cup milk; 2-3 mashed bananas; 2 1/2 cups flour; 3 1/2 tsp. baking powder; 1 tsp. salt; 1/2 cup chopped nuts (optional)

Preheat oven to 350F. Mix sugar, oil, vanilla, and egg in a large bowl with a wire whisk. Stir in milk and bananas. Use a masher if necessary to break up the bananas. Add flour, baking powder, salt and nuts. Stir until mixed.
Pour into a well greased bread pan. Bake for 40-45 minutes or until a stick inserted in the center comes out clean.

Once bananas start turning brown and are too soft to eat, just stick them in the freezer and use them later on for banana bread - they're great!
