2 medium cucumber, peeled and sliced very thin
4 tablespoons sour cream
1 clove garlic, chopped
1/4 teaspoon salt and pepper ( I add a lot of pepper)
1 tablespoon white vinegar
1 medium sweet onion, thinly sliced

Directions:
Directions:
Combine the cucumbers, onion, garlic and salt in a colander.
THIS IS IMPORTANT: Place the colander in the sink and let stand for 1 hour
Squeeze out as much water as you can with your hands.
Then place in a bowl and add the sour cream and vinegar.
(You may also add thinly sliced onions at this point).
Pepper and a little sugar can be added to taste.

I like to let these set in fridge overnight to marry all the flavors. SSSooooo much better on day two.
