1 stick butter
3 T. Dijon mustard
1 1/2 c. finely ground pecans
6 skinless, boneless chicken breast, pounded to 1/4" thickness
1 T. oil
2/3 c. sour cream
1/2 t. salt
1/4 t. pepper

Directions:
Directions:
In a small dish melt 6 T., add 2 T. mustard. In another dish place pecans. Dip chicken in butter ix and then coat with pecans. In a frying pan heat 2 T. butter and 1 T. oil. Cook Chicken till lightly brown and tender. Cover with foil to keep warm.
SAUCE
Discard all but 2T fat from pan. Reduce heat to low. Add sour cream, 1 T. mustard, salt and pepper. Blend well. Cook till just heated. Serve with chicken.
