1/2 c. cornmeal
2 c. scalded, sweet milk
2 T. bacon fat or butter
1/2 t. baking powder
3 eggs, separated
1/2 t. salt

Directions:
Directions:
Slowly add meal to milk and cook over low heat till the consistency of mush (oatmeal). Blend in butter. Remove from heat. Fold in egg . yolks.While beating the egg whites add salt and beat till stiff. Add baking powder and continue to beat. Fold in mush. Pour into heated 1 1/2 qt. casserole greased on the bottom. Bake at 350
for 45 minutes until brown on top.
