Grilled Tuna Steaks Recipe

4 small tuna steaks
2 tsp salt
2 tsp ginger root, finely chopped
1/2 tsp pepper
4 tbsp cornstarch, divided
4 tsp green chiles
1/4 c water
1 tbsp sugar
1/4 c peanut oil
1 tbsp galic, minced
1 c chicken broth
2 green onions, thinly sliced (include green tops) for garnish

Pat tuna steaks dry with paper towels to remove excess moisture.
Mix salt, ginger and pepper together in small bowl.
Coat both sides of fish with mixture and rub about 1 tbsp of cornstarch on sides of steaks.
Cover and refrigerator for 30 min.
Mix green chiles w/remaining tbsp of cornstarch, water and sugar in small saucepan over med. heat.
Add peanut oil, minced garlic and chicken broth, and blend well.
Bring to boil and stir constantly until thickened a bit.
Cool and reserve for basting while grilling tuna.
Prepare grill for moderate cooking.
Brush grates of grill with oil to prevent to sticking.
Grill tuna steaks about 4 or 5 min. on each side, marking sure to baste frequently.
Grilling time will vary w/thickness of steaks; est. 10 min. per inch of thickness.
