1/2 c unsweetened applesauce
1 oz can unsweetened crushed pineapple
1/3 c skim milk
1/3 c fat free egg substitute
1/2 tsp vanilla extract
1-3/4 c flour
1/3 c sugar
2 tsp double-acting baking powder
1/4 c firmly packed light brown sugar

Directions:
Directions:
Preheat oven to 350.
Spray 9" square baking pan with cooking spray.
In med. bowl with wooden spoon, stir together applesauce, pineapple juice, milk, egg substit, and vanilla.
Scrape batter into pan.
Spoon crushed pineapple over batter and sprinkle with brown sugar.
Bake until golden about 30 min.
Cool in pan on a rack 10 min.
Serve warm.
