4 chicken breasts
2 eggs
1 clove fresh garlic, minced
2 c. bread crumbs
1/2 c. Parmesan cheese (not fresh)
1 tsp. garlic salt
1/2 tsp. oregano
1/2 tsp. basil
1/2 tsp. pepper
2 c. spaghetti sauce
1 to 2 c. mozzarella cheese
1/2 c. olive oil

Directions:

Cut chicken horizontally into 8 pieces. (I use the half breast of chickens that you buy skinned and frozen and do not cut them.) Pound a little thinner if like. Mix eggs with fresh garlic in a bowl. Mix bread crumbs, garlic salt, pepper, oregano and basil in another bowl. (Can use Italian seasoning instead of each individual item.) Heat 1/4 cup oil in large skillet. Add more oil as pan gets dry. Dip chicken in eggs, bread crumbs then fry in oil until brown and crispy. Put the sauce into a baking dish. Place cooked chicken on top. Cook for 15 minutes in a 350 oven. Then add as much mozzarella as you want and put back in oven until cheese is melted. I also use fresh Romano here.

Serve with spaghetti. Can use powdered garlic instead of fresh garlic if do not have or just dip in eggs and then in bread crumbs with other seasonings.
