12 medium potatoes
1 c. salad oil
1/4 c. sugar
1 tsp. pepper
1/2 c. onion, chopped fine
4 T. vinegar
1 1/2 tsp. salt
3/4 c. water
1/2 c. celery, chopped



Directions:
Directions:
Cook potatoes with the jackets on until soft. While warm, peel the potatoes and slice or cut into cubes. Add the onion and celery.

Dressing:

Mix together the oil, water, vinegar, sugar, salt and pepper in a sauce pan and bring to a boil. Pour over the potatoes and chill.

I use half of the ingredients for the dressing and it still is enough for the potato salad.
