1 unbaked pie shell
1/2 C. unsalted butter
1/2 C. sugar
2 eggs
1 8-oz. can crushed pineapple, undrained.
1/4 tsp. Rum extract
1/4 C. flaked coconut
1-1/2 C. flour
1 tsp. baking powder
1/4 tsp. soda
6 oz. vanilla chips

Directions:
Directions:
Cream butter and sugar until light and fluffy.
Add eggs one at a time beating after each egg.
Fold in pineapple, rum, coconut and vanila chips.
Put in pie shell and bake at 350 degrees for 19 minutes.
Cool, refrigerate until chilled and then serve.
