3 (16oz) cans Northern Beans
2 medium onions, chopped
1 clove garlic, minced
1 T. vegetable oil
4 c. diced cooked chicken (I use a roasted chicken)
5 c. chicken broth
2 (4 1/2oz) cans green chilies drained, peeled and chopped
2 T ground cumin
1/4 t. cayenne pepper
1/4 t. dried oregano
1/4 t. ground cloves
1/2 T. chili powder
1/8 t. hot paprika, optional
1/8 t. ground cardamom, optional
Grated Monterey Jack Cheese
Sour cream

Saute onion and garlic in oil until tender. Combine beans, onion mixture, chicken and next 9 ingredients in a 5 qt. stockpot, and bring to boil. Reduce heat to low, and simmer for 1 hour. Add additional seasoning to taste. Serve with cheese, sour cream, and salsa. Best prepared a day in advance.
