Ingredients:
1 1/2 pounds ground chuck Approximate.
1 cup instant rice
1 large can tomato juice
1 large diced onion
2 eggs
1 T worchester sauce
1/4 cup ketchup
1T mustard
1 T minced onion
Salt and pepper
2 tsp. Mrs. Dash original blend

Directions:
Directions:
Mix all ingredients with ground beef except tomato juice. Form into balls (rice makes meatballs look like porcupines).

In a large saucepan or Dutch oven, Heat tomato juice seasoned with salt and pepper to boiling; place porcupine meatballs in boiling juice carefully. Cover and simmer, stirring frequently, for about 45 to 55 minutes. Rice should be tender and puffed out a bit from porcupine meatballs and sauce should be thick like gravy.

Personal Notes:
Personal Notes:
If I have a choice, I like to mix meat mixture the night before to give the spices a chance to work together. Tastes better! Use the tomato gravy over mashed potatoes or rice.
