2 lbs. new potatoes
1 lb. whole mushrooms
1/4 c. butter melted
2 tbsp. horseradish
1/2 tsp. salt
1/2 tsp. pepper
1/2 cup bread crumbs
1/3 cup chopped basil
3 tbsp. olive oil
1 tbsp. pepper
1 tsp. kosher salt
3 tbsp. chopped thyme
2 tbsp. chopped parsley
1 1/2 lb. pork tenderloin

Directions:
Directions:
Peel a 1" strip around the center of each new potatoe. Place potatoes and mushrooms in a large bowl. Add the melted butter and the next 3 ingredients, tossing gently to cover the potatoes and mushrooms. Place potatoes and mushrooms on a lightly greased baking dish. Bake at 425 deg. for 20 minutes.
Stir together the bread crumbs and the next 5 ingredients. Moisten tenderloin with water. Press the crumb mixture over the tenderloin and place in oven with potatoes/mushrooms. Bake at 425 deg. for 35 to 45 minutes.
