1 lb. shrimp (small to med.) 7 roma tomatoes diced 2 cucumbers diced 1 white onion diced 1 bunch of cilantro finely diced 1 1/2 tbsp lemon juice 1 avocado diced 1/2 t. salt 1/2 t. pepper 1 can elpato jalapeno sauce
Mix all ingredients together and refrigerate for several hours or overnight for best results. Serve with tortilla chips.
