1 cup coarsely chopped onion
1 clove garlic, crushed
2 tbsp salad oil
1/4 cup cornstarch
4 cups water
3 vegetable bouillon cubes
3 tbsp soy sauce
1 1/2 cups Minute Rice
2 cans tuna, drained and coarsely flaked
1 can (16-oz) Chinese or chop suey vegetables, rinsed and drained

Directions:
Directions:
Saute onions and garlic in oil in saucepan just until tender, but not browned. Dissolve cornstarch in water; stir into onion mixture with bouillon cubes and soy sauce. Cook and stir over medium heat until cubes are dissolved and mixture is clear and thickened. Bring to a boil. Stir in rice, tuna and Chinese vegetables. Reduce heat, cover and simmer 5 minutes, stirring occasionally. Garnish with crisp chow mein noodles, chopped parsley and diced pimiento, if desired. Makes 5 servings.
