1 c. butter, softened
2/3 c. firmly packed light brown sugar
1/3 c. cornstarch
2 c. all-purpose flour
1/4 t. salt
2 t. vanilla
2 c. coarsely chopped honey-roasted peanuts, divided
2 c. (12 oz pkg) Nestle Chocolate Morsels

Directions:

1. Beat butter at medium speed with an electric mixer until creamy.
2. Combine brown sugar and cornstarch; gradually add to butter mixture, beating at low speed until blended.
3. Add vanilla and 1 c. peanuts, beating at low speed just until blended.
4. Turn dough out into a lightly greased baking sheet; pat or roll dough into an 11x14 pan, leaving at lease a 1" border on all sides of baking sheet.
5. Bake at 350 for 20 minutes or until golden brown. Remove baking sheet to a wire rack; sprinkle shortbread evenly with chocolate morsels. Let stand 5 minutes; gently spread melted morsels over shortbread.
6. Sprinkle with remaining 1 c. peanuts, and let cool completely. Cut or break shortbread into 2 to 3" irregular-shaped pieces.
