2 limes
24 peeled shrimp
2 tbsp olive oil
1 clove garlic, finely chopped
1/2 tsp red pepper flakes
1/3 c mayonnaise
2 tbsp honey mustard
1 large chipotle chile in adobo sauce (7oz) can, finely chopped
1 tsp adobo sauce
1 tbsp chopped cilantro

Directions:

1. Reserve 1 lime for garnish. Grate 1 tsp peel from other lime. Cut lime in half; squeeze enough juice to measure 2 tbsp.
2. In plastic bag, mix oil, garlic, pepper flakes, lime juice and grated lime peel. Add shrimp. Rotate to coat shrimp. Refridgerate 30-60 min.
3. In bowl, mix mayonnaise, honey mustard, chipotle chile and adobo sauce. Cover and refridgerate.
4. Heat oven to 400 degrees. Remove shrimp place in baking pan. Bake 5-7 min. Place on platter and spronkle with cilantro. Spoon dip into bowl. Garnish dip w/lime wedges.
