(1st part)
1 lb black beans
1/4 cup mazola oil
1 large green pepper

(2nd part)
3 tablespoons vinegar
salt to taste

(3rd part)
1 large green pepper
1 large onion
5 or 6 garlic cloves
1/4 cup olive oil
1 tsp oregano

Directions:
Directions:
Night before, wash black beans well and let set over night with about four fingers of water above black beans.

DO NOT drain water from beans. Next morning, add first part to beans, bring to a boil. Lower heat and cook until amost tender (halfway).

At this point, add 2nd part and again bring to a boil and again, lower heat and and continue to cook.

Meanwhile, saute the third part (be sure to rub oregano between hands). When sofrito is sauteed and done (not overcooked), add to beans. Bring to a boil and then lower heat and cook to desired consistancy. Cook beans covered.
