6 T butter, melted
3 T grated Parmesan cheese
8 small-medium unpeeled red potatoes, halved lengthwise

Directions:

Pour melted butter into a 9x13 pan. Sprinkle Parmesan cheese over butter. Place potatoes with cut side down over cheese. Bake, uncovered at 400 for 40-45 minutes or until tender.

This is such a great recipe when you need a quick sidedish. My kids love them and often garnish them with ranch dressing. To make cooking time even faster, you can microwave the whole potatoes for 10-15 min. - then slice lengthwise and bake in oven for 15-25 min. or until tender. I've also done these as appetizers with baby potatoes. Follow same recipe just use the baby potatoes and reduce cooking time. Serve with toothpicks.
