Have guests write their name on a quart-size freezer bag
with permanent marker. Butter or spray Pam on the inside of the bag. Crack 2 eggs (large or extra-large) into the bag (not more than 2 eggs per bag though) shake to combine them. Put out a variety of ingredients such as: cheeses, ham, onion, green pepper, tomato, hash browns, salsa, etc., whatever you like in an omelet.
Each guest adds prepared ingredients of choice to their bag and shake. Make sure to get the air out of the bag and zip it up. Place the bags into rolling, boiling water for exactly 13 minutes. You can usually cook 6-8 omelets in a large pot. For more, make another pot of boiling water.
Open the bags and the omelet will roll out easily. Be prepared for everyone to be amazed. Nice to serve with fresh fruit and muffins; everyone gets involved in the process and a great conversation piece.

PS...... This is also great to make ahead and freeze .. when ready to use just pop in boiling water just until thawed and warm the way you like it...or even nuke it. No fry pan to clean and no dishes to wash.. My kind of cooking...

From Family Reunion 2006- Bertha and Ron and family was in charge of the reunion this year. There were a lot of us who assigned to different meals. Ron had a big pot of water heating on the stove. It what a lot of fun and I wanted to get this recipe in the book. I loved it because it was easy with little mess. Thanks so much Ron.
