2 tsp olive or canola oil
1 stalk of green onion, diagonally sliced
1 small red chili pepper, diced
2 cloves garlic, minced
1 Tbsp fresh ginger
1 to 1 1/2 lb shrimp, shelled and deveined
3 cups cooked brown rice
2 large egg whites, lightly beaten
1 Tbsp
oyster sauce
1 Tbsp reduced sodium soy sauce
1 Tbsp dark sesame oil

Directions:

In a 12" skillet, heat 1 tsp of oil over moderate heat. Add the green onions and stir fry for 1 minute. Add the chili pepper, garlic and ginger and stir fry for 2 - 3 minutes. Transfer them to a bowl. Add the remaining teaspoon of oil to the skillet and when hot but not smoking, add the shrimp and stir fry for 3 - 4 minutes or until pink. Transfer the shrimp to the bowl of vegetables. Add the rice to the skillet and stir fry for 3 minutes or until warm but not brown. Lower the heat and make a slight well in the center of the rice. Add the egg whites and stir until softly scrambled. Stir in the reserved vegetables and shrimp, oyster sauce, soy sauce and sesame oil and cook until heated.
