This recipe for Anything Goes Muffins, by Jennifer Beaumont, is from The Wright Family Cookbook,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
2 cups flour 1 Tbsp. baking powder 1 tsp. salt 1 tsp. cinnamon 1/2 cup brown sugar, packed or white 1 cup applesauce, OR mashed bananas, zucchini, carrots, cooked cereal, pumpkin (add one cup of chocolate chips), cranberry sauce, etc. 1 egg, slightly beaten 3/4 cup milk or buttermilk 1/4 cup oil
Sift together dry ingredients in large mixing bowl. Add remaining ingredients and stir just enough to moisten. Spoon into greased muffin cups or paper lined muffin cups.
Bake in preheated oven 375º for 15-18 minutes.
Note 1/2 cup grated zucchini and 1/2 cup whole cranberry sauce is great. Be creative!
I love the variety available with this recipe! We love pumpkin chocolate chip or cranberry walnut muffins. Have fun!
I got this recipe from Jane Thomas in my ward (Rivergrove 3rd).
