2 cups flour
1 Tbsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1/2 cup brown sugar, packed or white
1 cup applesauce, OR mashed bananas, zucchini, carrots, cooked cereal, pumpkin (add one cup of chocolate chips), cranberry sauce, etc.
1 egg, slightly beaten
3/4 cup milk or buttermilk
1/4 cup oil

Directions:
Directions:
Sift together dry ingredients in large mixing bowl. Add remaining ingredients and stir just enough to moisten. Spoon into greased muffin cups or paper lined muffin cups.

Bake in preheated oven 375 for 15-18 minutes.

Note 1/2 cup grated zucchini and 1/2 cup whole cranberry sauce is great. Be creative!

I love the variety available with this recipe! We love pumpkin chocolate chip or cranberry walnut muffins. Have fun!
