5 lbs potatoes, cooked and mashed
1 stick of butter
2 3 oz cream cheese, softened
1 8 oz sour cream
salt and pepper
1 - 3 Tbsp fresh chives, minced
1/2 cup milk
shredded cheddar cheese (optional)

Directions:
Directions:
Cook and mash potatoes; add butter (all but 2 Tbsp), cream cheese, sour cream. salt, pepper and chives. If needed add milk and shredded cheese. Dot with butter. Bake at 350 for 1/2 hour.

Can be prepared a day or two ahead, omit baking until ready to serve.
