3 Tbsp butter
5 medium Vidalia onions, thinly sliced
1 partially baked 9" pastry pie crust
1 cup grated aged Swiss cheese
2 whole eggs
2 egg yolks
1 cup milk
1/2 cup heavy or whipping cream
1 tsp salt
cayenne pepper to taste

Directions:
Directions:
Preheat oven to 350. Melt butter in a heavy saucepan; add onions and cook over medium high heat until they are limp but not the least bit brown.
Drain the onions and arrange them in the pastry pie shell; cover with grated cheese. Beat together eggs, yolks, milk, cream, salt and pepper and pour over cheese. Place on lower shelf in oven and bake until the pie has puffed in the middle and is golden brown all over, 35 to 40 minutes.

I always seem to have too many onions so I normally buy two prepared pie crust and split the recipe between the two.
This dish is wonderful with a salad for a summer meal.
