"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Fudge Brownies, by Cari Uland, is from Cooking in the Tropics 2,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
3 eggs 1 3/4 c. sugar 2 tsp. vanilla 2/3 c. butter or margarine 1/2 c. cocoa 1 c. flour 1/2 c. chopped nuts if desired
Grease square baking pan; set aside. Combine eggs, sugar, and vanilla in a bowl. Beat cocoa and butter. Beat in flour until just blended. Stir in nuts if desired. Spread batter in prepared baking pan. Bake at 350º for 45 minutes or until brownies begin to pull away from the sides of the pan. Top will be dry and "done" while inside is very moist. Don't overcook. Cool on a wire rack, cut into squares and serve.
This recipe was adapted for cooking in the high altitude of Jos.
