1 med. zucchini; quartered & cubed 1 small onion, chopped 1/2 stick butter or margarine 1 can cream of chicken soup 1 cup minute rice 2 cups shredded mild cheddar cheese 1 1/4 cups milk 1/4 cup water salt, pepper to taste
Brown zucchini and onion in 1/2 stick butter. Add all other ingredients. Stir only until cheese is melted. Pour into medium casserole and bake 350º for 45 minutes until top and edges are light golden brown. Serve with salad and warm bread!
