20 Ritz Crackers
3 egg whites
pinch of salt
1 cup sugar
tsp vanilla
1 cup chopped pecans
1/2 pt whipping cream

Directions:
Directions:
Place crackersw in a zip lock bag - remove air and roll crackers until all large pieces are crumbled. Set aside.

Whip egg whites until frothy. Add salt, continue beating while slowly adding cup of sugar and vanilla. Beat until stiff (like meringue). Fold in pecans & crackersw into glass buttered 8" pie pan.

Bake at 325 for 30 minutes until light golden brown. Cool completely. Spread whipped, whip cream. Refrigerate. Do not over bake!
