4 T. olive oil
2 large sweet peppers, diced
2 c. chopped sweet onions
4 t. chopped garlic
2 c. corn kernels, preferably fresh
6 T. cider vinegar
4 T. sugar
1/2 t. dry mustard
generous pinch of cayenne pepper
1 1/2 t. salt
3 T. fresh, chopped cilantro

Directions:

Heat olive oil in a large heavy skillet over medium-high heat. When hot, add the red peppers, and saute for 3 to 4 minutes. Add onions and garlic and saute for another 3 minutes. Add corn and cook 2 minutes more. Dissolve sugar in vinegar and add to the corn mixture. Add mustard,cayenne, salt and pepper and cook until liquid is evaporated, about 5 minutes. Remove from heat. Add cilantro when cooled.
Serve at room temperature with tortilla chips.
