2 1/2 lbs carrots
1/2 c mayonnaise
2 Tbsp minced onions
1 Tbsp horseradish
salt & pepper
1/2 c crushed saltine crackers
parsley chopped
paprika
butter

Directions:
Directions:
Preheat oven to 350. Cook carrots in boiling salted water. Reserve 1/4 c liquid. Cut carrots lengthwise in narrow strips. Arrange in baking pan. Combine reserved cooking liquid with mayonnaise, onion, horseradish, salt & pepper. Pour sauce over carrots. Sprinkle crushed crackers on top. Dot with butter. Sprinkle with parsley and paprika. Bake 20 minutes.
