1 8 oz Center Cut Yellow Fin Tuna Filet
1/4 Cup Pesto
1/4 Cup Freme Fraise
1/4 Cup Balsamic Glaze
1/4 Cup Toasted Pine Nuts (Toast w/seasoning)
1 Tbsp Olive Oil

Seasoning
1/4 Tbsp Salt
1/4 Tbsp Pepper
1/4 Tbsp Garlic
1/4 Tbsp Smoked Paprika

Tomato Cancase
1 diced Tomato
1 Tbsp Minced Garlic
1 Tbsp Olive Oil
1 Tbsp Balsamic Vinegar
3 Leaves of Chopped Basil

Directions:
Directions:
Tuna
Season and sear or grill the tuna. Cut into thin slices & garnish with pesto & creme fraise, balsamic glaze, olive oil and pine nuts.

Tomato Cancase
Mix all ingredients together and use it to garnish the plate.
