! 1/4 c. olive oil
3/4 c. fresh basil
6 T. pine nuts
1/4 c. fresh parsley
1/4 c. fresh mint
1/4 c. fresh lemon juice
4 garlic cloves
4 t. dijon mustard
Beef
1 3# beef sirloin steak (about 2 inches thick)
1 T. butter
1/4 c. Olive oil

Directions:
Directions:
For sauce: Combine all ingredients in food processor and blend to a coarse puree. Cover and chill.
For beef: Sprinkle beef with salt and pepper and melt butter with oil in a large skillet over medium-high heat. Add beef and brown to caramelize on both sides. Finish in oven to desired doneness. Make sure not to overcook...meat should be medium-rare to rare. Cool up to 2 hours.
To serve: Slice beef and fan out on large platter. Surround beef with cannelini beans that have marinated in crushed garlic, fresh sage, and olive oil.
Spoon sauce over all. Place remaining sauce in dish to
pass at the table.
