1 pound Monterey Jack or feta cheese finely shredded
2 eggs slightly beaten
1/4 cups finely snipped chives
1/4 teaspoon white pepper
1 pound phyllo leave and thaw
1/4 cup margarine or butter

Directions:
Directions:
In a small bowl crumble cheese. Stir in eggs, chives, and white pepper until mixed well. Cut phyllo into 3 strips ( 2 layers each). Cover with damp towel to prevent from drying. Place 1 heaping teaspoon filling on one end of strip: fold end over en a triangle shape to opposite end. Place on greased cookie sheet. Repeat with reaming filling. Brush with butter or margarine. Cover and refrigerate for no more than 24 hours. Heat oven to 350. Bake until puffed & golden brown, about 20 minutes

Note: Filled Phyllo triangles can be kept int the refrigerator unbaked, for 2 days or frozen immediately for further use.
Preheat oven to 400 bake for 10 minutes
