1 large can crushed pineapple (drained and chilled)
1 3-oz pkg lemon jello dissolved in 1 cup boiling water and 1 cup pineapple juice
2 - 3 cups cooked rice
1 1/2 cups Cool Whip
Maraschino cherries, optional

Directions:
Directions:
Refrigerate jello until slightly thickened, then whip until like heavy cream. Add pineapple and rice. Then fold in Cool Whip (or 1 cup cream whipped to which add 1/4 cup sugar). Maraschino cherries on top is optional.
