Ingredients:  
1 chopped onion
1 chopped bell pepper
2 lbs. Velveeta
1 lb. crawfish
Seasoning to taste

Directions:
Directions:
Saute' onions and peppers in butter. Chop Velveeta and add to pot. When cheese is melted, add crawfish and simmer for 15 minutes, stirring often. Serve with chips or crackers.

Try jalapeno Velveeta for a spicier version. You can also chop or process the crawfish for a finer texture.
