1/2 c butter
1/4 c minced fresh parsley
1 medium fresh tomato, chopped
1/2 c minced celery
1/4 c firmly packed blue cheese
3 c soft bread crumbs
1 egg well beaten
1/2 tsp salt
1-1/2 to 1-3/4 lbs flounder fillets
juice of 1 lemon
fresh pepper
paprika

Directions:
Directions:
Melt 1/4 cup butter in 10' skillet. Add parsley, tomato and celery; cook, stirring often for 10 minutes. Remove from heat.
Crumble cheese into mixture. Add crumbs, egg and salt, mixing well. Spread mixture on fillets; roll up, fasten with toothpicks.
Butter an oblong 1-1/2 quart baking dish. Melt remaining 1/4 cup of butter; mix with juice of 1 lemon. Pour over fish rolls. Finish with fresh ground pepper and paprika for taste and color. Bake 350 oven until fish flakes easily - about 30 minutes. Serve with rice pilaf.
