1 cup Great Northern or dried white beans
6 cups water
2 oz salt pork or ham
2 carrots, scraped and sliced
1 medium onion, chopped
1 stalk celery, diced
1 ripe tomato, seeded and diced
1/2 small head cabbage, chopped (about 4 cups)
1 tbsp chopped fresh basil or parsley leaves
Salt and pepper to taste

Directions:
Soak beans overnight in enough water to cover. Drain liquid and discard. Add water and salt pork to beans, bring to boil. Reduce heat to low, cover and simmer 1 hour. Add vegetables and simmer 30 - 45 minutes or until beans are very tender. Discard salt pork. (If using ham, chop fine and return to pot.) Stir in basil, salt and pepper. Serve. Serves 6.
