1/3 c. golden raisins
3 # fresh spinach, coarse stems discarded
2 T. extra virgin olive oil
2 cloves garlic, minced
1/2 t. salt
1/3 c. toasted pine nuts

Directions:
Directions:
Soak raisins in warm water 10 minutes. Drain. Steam spinach over medium-high heat until leaves are tender, about 2-3 minutes. Drain, cool, and pat dry.

Heat oil in a large skillet over medium heat. Add garlic and saute until garlic turns opaque. Take care not not to brown the garlic as this will make the dish take bitter. Add spinach and cook stirring for about 1 minute. Add salt, pine nuts, and raisins and cook a few minutes longer until heated through. Serve immediately.

This dish is actually a typical Spanish tapas, served at most sherry bars in Madrid.. It is often accompanied by roasted almonds and olives. It can also be a wonderful side dish to any roasted meat.
