1 chicken, cut up, or pieces, breasts, thighs
1/2 tsp salt
1 medium onion, chopped
8 chicken bouillon cubes or equivalent
1 medium chopped green pepper
2 cups rice (regular), or 1-1/2 cups converted (Uncle Ben's) rice
3 cups water, or 3-1/3 cups if using converted rice
Butter or margarine



Directions:
Directions:
Brown chicken in butter. Remove chicken and brown onion and pepper. Crush cubes and add. Stir in rice, stirring well into butter remnants and brown bits to coat all rice. Add salt and water. Put chicken on top. Put in covered dish. Bake at 250-300 1-1/2 hours or until rice in center is cooked and tender.
