8 red, ripe tomatoes
extra-virgin olive oil
8 garlic cloves
1/2 bunch fresh thyme
sea salt and ground pepper

Directions:
Directions:
Preheat oven to 300 degrees. Slice tomatoes in half and place in a large bowl. Drizzle with a 4-count of oil. Toss in the split garlic cloves and thyme. Season with salt and pepper. Toss the tomatoes to coat and arrange on a baking sheet in a single layer, cut side up. I make sure to place garlic on top of each tomato. Pour any extra oil from bowl over the tomatoes and roast for 3 hours to concentrate the flavor. Cool and use these flavorful tomatoes tossed in a pasta, or on sandwiches
