2 2/3 c. coconut (7 oz.)
4 egg whites
2/3 c. sugar
1 t. almond extract
6 T. flour

1/4 t. salt

Directions:
Directions:
Preheat oven to 325. Mix coconut, sugar, flour and salt in bowl. Stir in egg whites and almond extract until well blended. Drop by teaspoonfuls onto lightly greased and floured cookie sheets. (I prefer using parchment paper.)
Bake 20 min. or until edges of cookies are golden brown. Immediately remove and cool on wire racks. You may drizzle with melted chocolate, if desired. Makes 3 doz.
