1 cup (2 sticks) butter, at room temperature
2 cups sugar
3 cups sifted flour (self-rising)
4 eggs
1 cup milk (for coconut add 1cup unsweetened coconut milk)
1 teaspoon vanilla

Directions:
Directions:
Preheat oven to 350 Farenheit
Grease and flour 3 nine inch cake pans
Using an electric mixer, cream butter unitl fluffy. Add sugar and continue to cream well for 6 to 8 minutes. Add eggs, one at a time, beating well after each egg. Add flour and milk alternately to creamed mixture, beginning and ending with flour. Add vanilla and continue to beat until just mixed. Divide batter equally among the prepared pans. Level batter in each pan by holding the pan three to four inches above the counter and letting it drop flat on the counter. repeat several times to release air bubles and assure more level cakes. Bake for 25 -30 minutes until done. Cool in pans for 5 to 10 minutes. Invert onto cooling racks. Cool completely and spread cake layers with your favorite frosting or topping.
