4 medium zucchini, cubed, steamed and drained
6 T. margarine
1 3/4 c. grated carrots
1/2 c. chopped onion
1/2 c. plain yogurt
1 can of cream of chicken soup
1 1/2 c. Pepperidge Farm herb seasoned stuffing

Directions:
Directions:
Saute carrots and onion in 4 T. of butter. Mix yogurt, soup and 1 cup of stuffing. Add zucchini, carrots and onion to yogurt mixture. Pour into 13 x 9 baking dish. Melt 2 T. of butter and mix with 1/2 cup (or more if needed) stuffing. Crumble buttered stuffing on top of mixture. Bake at 350 for 30 minutes.
