1 box Lemon flavored cake mix
1 lrg. can mandarin oranges, UNdrained
2 eggs

Icing:
1 - 15oz. can crushed pineapple
1 - 12oz. Cool Whip
1 sm. pkg. vanilla instant pudding, dry

Directions:
Directions:
Mix and beat together dry lemon cake mix, mandarin oranges - UNdrained and eggs. Pour into 2 or 3 layer pans, greased and floured well. Bake @ 350 for about 20 minutes.
Cool cake. Make the icing as follows: mix together the can of UNdrained crushed pineapple and the dry vanilla pudding. Refrigerate until chilled, then fold in the Cool Whip. You can ice the cake right away or return icing to refrigerator for another 10-15 minutes for a stiffer effect. Keep cake refrigerated, serve cold. Very refreshing!
