Tuscan Chicken Panini Recipe

Slow-cooked chicken
1 1/2 Italian herb seasoning
1 tsp. paprika
1/2 tsp. each kosher salt and freshly ground pepper
1 Tbsp. extra- virgin olive oil
1/2 cup dry white wine ( I use white grape juice)
4 cloves garlic

4 squares focaccia, halved horizontally
1 jar roasted peppers (yellow and red drained)
4 oz. sliced provolone cheese
olive oil cooking spray

1. Slow-cooked chicken; Mix Italian seasoning, paprika, salt, and pepper in a small cup. Brush chicken with olive oil; rub seasoning mixture all over chicken. Put wine and garlic in a slow cooker ( I just cooked it in the oven). When cooked tear chicken into large pieces.
2. Panini: Assemble sandwiches on focaccia with chicken, roasted peppers, and provolone. Spray sandwich with olive oil. Grill sandwiches in a panini press or a sandwich grill, or on a stovetop grill pan with a heavy skillet on top. Grill sandwiches until bread is lightly toasted and cheese is melted, about 5 min.
