2 chicken breasts, skinned
1 tsp. salt
1 egg white
1 tbsp. cornstarch
1 cup walnuts, english
1 green pepper, cubed
1 cup vegetables, broccoli, cauliflower, green
beans, onion, mushrooms etc.
2 tbsp. oyster sauce
2 tsp. sugar substitute
1/4 cup chicken stock
1 tbsp. sherry

Directions:

Mix salt, egg white and cornstarch. Cut chicken into 1/2 inch cubes, and mix thoroughly with egg mixture. Fry walnuts in hot oil until golden. Remove and drain. Fry chicken in hot oil for 2 minutes. Remove and drain. Heat 2 tbsp. oil in wok. Stir fry peppers and vegetables. Add oyster sauce, sugar, stock and sherry. Stir until dark brown. Add chicken and walnuts. Heat through. Remove to bowl.
