4 T. corn starch
1 c. sugar
2 egg yolks
2 c. boiling water
2 lemons, grated zest and juice

Directions:
Directions:
Mix corn starch and sugar to blend. Mix in egg yolks until evenly blended. Pour in 2 cups boiling water all at once.
Mix and stir continuously in top of double boiler until thickened. Add juice and zest of lemons.

Pour into baked pastry shell or pie crust.
For meringue topping, beat 2 egg whites with 1/8 t. cream of tartar and 1 T. sugar. Spread over slightly cooled pie and set under broiler until meringue peaks are lightly browned.
