"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

1 Whole chicken
Salt and Black Pepper

2 C. of flour
3 Tbs. of baking powder
1 tsp. of salt
3 Tbs. of lard or shortening
1 egg, beaten well
1 C. of whole milk

Cut the chicken up into quarters and place in a pot and cover with water. Add spices. Simmer the chicken until tender. You can leave the bones in or take the meat off the bone; it's up to you. Sift together the flour, baking powder, and the salt. Cut in the lard or shortening and mix in the egg and milk. Drop the dumplings by spoonfuls into the pot of chicken and broth and cook for 15 minutes or until the dumplings are done.
Remove chicken and dumplings and thicken broth for gravy.
