Crust:
2 cups all-purpose flour
1/2 cup confectioners sugar
1 cup unsalted butter, cold, cut into pieces

Topping:
6 large eggs, room temperature
3 cups sugar
1/2 cup lemon juice (Minute-Maid found in freezer section of grocery store works well)
1/4 cup plus 2 tbsp. flour
3/4 tsp. baking powder

Crust:
In a food processor combine the flour and confectioners sugar. Pulse in the butter pieces until the mixture resembles coarse meal. Pour into a 9"x13" pan and pat down to make a crust. Bake in a 350 oven for approximately 10 minutes or until lightly browned around edges. Set on a rack to cool to room temperature.

Topping:
In a stand up mixer, beat together eggs and sugar until thick and light in color. Slowly stream in lemon juice. Sift together dry ingredients and add to egg mixture, beating to incorporate. Pour the topping onto the baked crust. Bake at 350 for 35 minutes or longer. Squares are done when pan is shaken slightly and the topping does not jiggle. You may have to cover with foil to keep the top from browning too much until baking is complete.

Remove squares from oven and set on cooling rack. When cool, refrigerate the squares for at least 2 hours before cutting. Sprinkle with confectioners sugar before serving.
