6 game hens
Cajun seasoning
1 stick margarine
1 onion (chopped, 1/2 c.)
2 stalks celery
1 bell pepper
6 strips bacon
1 cup chicken broth

Directions:
Directions:
Season hens inside and out with seasoning. Place equal parts of vegetables and butter inside hens. Put slices of bacon over hens and pour chicken broth in pan. Cook covered 1 1/2 hours at 350 degree oven. Remove birds from pan, pour off juices. Return birds to pan and set oven at 500 degrees to brown.
