6 game hens Cajun seasoning 1 stick margarine 1 onion (chopped, 1/2 c.) 2 stalks celery 1 bell pepper 6 strips bacon 1 cup chicken broth
Season hens inside and out with seasoning. Place equal parts of vegetables and butter inside hens. Put slices of bacon over hens and pour chicken broth in pan. Cook covered 1 1/2 hours at 350 degree oven. Remove birds from pan, pour off juices. Return birds to pan and set oven at 500 degrees to brown.
