1 (10 oz.) pkg. frozen California Blend vegetables, thawed
1 (4 oz.) jar pimento, drained
1/3 Cup Sour Cream
1 Can Cream of Mushroom Soup
1/4 tsp. pepper
1 Cup grated Swiss Cheese, divided
1 Can Onion Rings

Directions:
Directions:
Preheat oven to 350
Mix vegetables, pimento, mushroom soup, sour cream, pepper and 1/2 Cup cheese. Put in a casserole dish and bake for 30 minutes. Remove from oven and top with onion rings and remaining 1/2 Cup cheese. Bake 10 minutes more. Note: California Blend is a mixture of cauliflower, broccoli and carrots.
